Do I need to be careful about nitrates in celery salt?

I'm doing a suckling pig for Easter, I was thinking id season it simple with onion powder, white pepper, and celery salt, but I'm worried that the nitratesight start to cure the pig and might mess with the texture you normally look for in a suckling pig
