Escargot/Snail canning spices?

I'm making snails for a party and all the cans available contain the ingredients snail, water, salt. They all also list just "spices". I'm in Australia and usually ingredient labels will give the constituent spices.

I have some guests with allergies so was wondering if anyone knows what makes up the canning liquid?
