Should I add cooked chicken at the beginning of the 3 hour simmer for my gumbo? Or at the end?

I don't really like simmering cooked chicken for too long but a lot of gumbo recipes I've watched tend to put cooked chicken for the whole simmering time. I'm guessing after a long simmer it becomes pulled chicken which might be ideal for the gumbo. But I'm not sure. Has anybody tried this technique?
