I have a recipe that has me halving a sweetheart cabbage, browning off the exposed bit, the flipping and roasting and serving with a herbed mashed potato. I believe halving is at least partly a presentation thing, and I can work around that if something else has the same flavor but not shape.
My problem is this is the first I've heard of sweetheart cabbage, and I can't get my hands on one. What would be a good substitute?
