Turkey roulade tips

I found a whole turkey in the freezer and I'm wanting to make a roulade. Ive just never done anything like this.

I'm cutting and deboning the turkey myself I feel comfy with that part.

Just how do make it dry and tips for the stuff I don't want to make it thanksgiving like
