Trying to make chocolate curls, can I restart?

I'm trying to make chocolate curls to use as a garnish for a cheesecake. The recipe I started with had me spread the melted chocolate on parchment paper on the back of a sheet pan. When I tried to make the curls the chocolate just slid around because parchment paper. I've since watched a couple of videos where they don't use the same method but don't use the parchment paper.

My question is, can I just re-melt the chocolate in a double boiler and start over using the correct technique?
