What cooking oil is best when preparing food that is meant to last long inside the fridge or food pantry?

For context, if we want to make chilli oil and we intend to keep it for months, which oil is the best that:

  1. Would not leave an aftertaste

  2. Would not cause a change in the taste after being stored longer?
