I just made honeycomb candy (Crunchie) and the janky recipe said not to touch the sugar mixture from when it starts boiling until it reaches 300 degrees. Why?

Just seemed counterintuitive. Is not stirring specific to making a honeycomb or common in lots of confectionary recipes?
