Could someone please help me.
I don’t know how my wife can get a bolognaise sauce done right on weeknights but my Sunday bolognaise 4 hour cook tastes a bit dry and grainy. She says it’s amazing but she always thinks everything I do is amazing.
It’s not amazing.
It is deep in taste but poor in texture. I follow the YouTube influencers instructions
- Use a bit of butter with olive oil
- Cook some diced pancetta for flavor
- Add Chopped onions, garlic, celery, carrots (food processor)
- Cook it out until turning golden in Le cruset pot.
- Add butchers premium minced beef
- Cook out the moisture until browning on the bottom of the pot (10 minutes)
- Add seasoning including nutmeg, cayenne, salt and pepper
- Add tomato paste
- Add red wine and cook out for 5 minutes
- Add beef stock 1 litre
- Cook for 4 hours open, stirring and adding water on low heat using heat diffuser too.. just a little bubbly in the middle of pot.
Taste is 10/10 Texture of mince beef 1/10 grainy sandy aftertaste
