Looking for book/article recommendations to learn classic techniques?

Late 20's male in the UK that has lived off noodles/pasta and ready meals for the last 10 years since moving out to live alone.

Since Covid has come along, it has allowed me to work from home and devote more time to cooking rather than commuting!

In the last 2 years, I have definitely developed more of a passion for cooking and love shows live Masterchef, Masterchef Australia, Hells Kitchen etc. I also want to start eating 'properly' rather than processed carbs all the time. I have also started eating beef in the last few months (I never used to).

I have noticed on these high-end cooking shows, they all know certain techniques & food sciences, how-to, dos & don'ts, flavour combinations or other things like:

-How to 'reduce' a dish

-Balancing a dish

-Using alcohol to cook

-Flambé (or other technical cooking methods)

-How to properly season

-Resting certain foods

Etc etc - I know absolutely nothing about those^ things, lol.

So, are there any particular beginner books/guides for the above rather than just recipes?
