Sugar is Crystalizing and Won’t Fully Melt

When I try melting sugar in a splash of water on the stove, the sugar never fully melts. It just crystallizes.

I’ve tried low heat and high heat. Only swirling my pan, no stirring. And I use the same Calphalon stainless steel pan each time.

I’m technically using this as a sugar wax, so I’m not making caramel sauce or anything. I just need to know why it won’t turn clear in the pan.

Should I try no water? Stirring constantly? I’m at a loss.

Lock the post if needed, but I’m pretty sure this subreddit will be more helpful than any Google search I’ve tried.

Update: it still crystallized the slightest bit after adding more water, nowhere NEAR as much as it had in the past. I might let it cook a bit longer next time. And I guess rinse everything again before I try.
