I baked off a whole case of mushrooms earlier today in a deep hotel pan. Got them where we needed to for service, but wound up with a thick liquid from all the water content in the shrooms. Tasted very shroomy, only used oil to coat the mushrooms and maybe a couple tbsp's of S/P for the batch.
Does that liquid qualify as a stock? Some kind of base? What search terms and concepts should I be using to get an idea of and frame what I can do with this liquid?
