What happens if you add too much water or fat to flour tortillas?

I've been trying to get better at making flour tortillas, and I want to know what each ingredient's role is so I know if I'm using the right amount.

My basic understanding is too little fat or water will make the tortillas brittle, but what happens if you add too much fat or water? How will I know if I need to reduce the amount of either of them?
