Help identify weird chicken breasts I was served.

A local decent but not great Italian place has started serving these weird chicken breasts. I asked them about it, but they said nothing has changed.

I'm curious as to what exactly I was eating.

Appearance: No browning, fairly flat with a slightly domed top. Weirdly vertical sides. Almost like a loaf. When dissected the chicken had straight striations like a regular chicken breast.

Texture: The weirdest part. The texture was decidedly spongy and wet. Almost like a boneless porkchop, but wetter.

Flavour: Fine, chickeny but also somehow weirdly sweet?

Didn't think this fit any other culinary sub, so I tried here.
