Question about cooking lobster.

Hello, I have a question about cooking lobster.

Recently, My parents steamed three lobster and three out of two had weird, sour, and bitter black gunks inside, which, I assumed to be undercooked roe. However, they said that they cooked it for around 30 minutes because they had potatoes and corns along with it. So, now my mind is torn between"This is still undercooked" and "Why are they still undercooked despite steaming them for 30 minutes". What are your thoughts?
