I formed up some crab cakes that are sitting in the fridge now to cook tomorrow.
I was thinking of broiling them in the oven, brushed in melted butter in an oiled cast iron pan. Should I preheat the pan before oiling and laying the cakes down?
Do I need to flip the cakes half way through or can I just let them broil with no flip? Lastly, should these be set on the top or middle rack if broiling on low?
