How long does roux last in the fridge?

Made a batch of dark roux in the oven last week but only wound up making half the recipe of gumbo. Leftover roux has been in a glass container in the fridge. I’m sure it’s safe to eat — that much oil isn’t going to be a good environment for bacterial or mold growth — but will the taste and quality still be good?
