Hey! So for my senior year ends this semester. To graduate, I have to take a catering class. I got GM of the event but am trying to come up with a menu with the chef. We’re doing a “roadtrip through Italy” event. Starts in northern Italy and ends in Sicily. We’re trying to have fun creative twists with the flavors of Italy to create something unique. I’m was wondering if anyone had some cool ideas for an appetizer or entree. I was thinking Florence for the app and Rome for the entree. So far we have a bruschetta trio (tomato basil, fig and ricotta, herbed olives with goat cheese) I was also thinking of doing a granita for dessert to refresh the palate instead of overstuff you. I’m not sure if I’m making a ton of sense.
