I’ll ask in r/oldrecipes, too, just thought I would throw this out there. A gazillion years ago on a cooking show I saw, I’m pretty sure, Paul Prudhomme make what he referred to as a “salmon pudding.” It was a salmon steak with butter and blackening or creole seasoning on one side, spice side down in a hot cast-iron pan, covered, for 10 minutes. Turn the fire off after putting the fish in the pan. I made it a number of times, even figured out how to form filets into “steaks” when steaks became hard to find. I can probably wing it, but it’s been a very long time and I’d rather read through a recipe, quick. Does anyone remember? Have a recipe? TIA!
