I've been broiling salmon with miso marinades lately, and the recipes always seem to call for sake.
The issue is that neither my wife nor I really like to drink sake, so even when I buy small bottles I use a few table spoons or whatever and the rest goes in the fridge.
Under these conditions, how long would you say the opened bottle of sake can last in the fridge? Couple of weeks? Or am I pushing my luck?
The salmon is already expensive so I'd love to not waste a bottle of sake each time!
