Want to recreate a dip

Found this dip in a little corner store on my travels and have fallen in love. Obviously I have the general ingredient list from the label but I'm curious if anyone knows a recipe that can get me close before I try to recreate it blind (which is something I'm not great at). The label is as follows:

[Bruschetta dip] Eggplant (24%), Zucchini (24%), Pumpkin, Sun dried tomato, Bell pepper, Balsamic onion, Mixed herbs, Cumin, Coriander powder, Pepper, Sugar, Salt, Citric acid, Garlic, Preservative, Canola oil, Cashew nuts

Whenever I google it it really just comes up with traditional bruschetta recipes. Any help is appreciated!
