Freeze Thaw Fresh Salmon

Hi everyone, had the opportunity to go on a fishing trip with some friends and ended up with 6 salmon ranging from 7-10 pounds. The fisherman gutted and took the heads off the fish, however to transport back home we had to freeze the fish (just gutted and beheaded) and put in a cooler under the plane.

The fish made it back fine, but now I have 6 salmon bodies in my freezer. I want to filet them and refreeze them but am reading mixed reviews. I believe it will be safe, but the quality may drop significantly? The fish were frozen within 15 minutes of being gutted and have been frozen for 6 days now.

Is it okay to fridge thaw, filet, then vacuum seal? Or will the quality be trash?
