Recently discovered velveting meat. What other wok/stir fry tips do I need to know?

I’ve been using my wok for a while but tried velveting chicken thighs tonight and it was the most tender chicken I’ve ever had. Plan on trying beef soon but unsure what cut to get. What other techniques or tricks with stir frying do I need to know? Sauce recipes welcome too
